Variety: Black Gamay with white juice Color: Rosé Average age of vines: 45 years Growing method: Head-pruning, shredded vine shoots, several trellised parcels, 25% grass-seeded, narrow tractor for mechanical work. Winemaking method: After harvesting, the grapes are immediately pneumatically pressed and then chilled for 36 hours (4 to 5°). They are then racked and heated to 12° to begin fermentation (48 to 72 hours) then chilled again between 2 and 4° so that the Gamay aromas develop at a low temperature. When the density indicates 50 to 60 grams of residual sugar, it is chilled to 5° for a final sterile filtration. A superb result, the aromas burst in the mouth! Harvesting methods: Manual harvesting Average shelf life: 2 years Tasting: A pink candy color with scents of freshly picked grapes and red fruits.
