Appellation history: Recognised in 1975, the appellation Crémant-de-Bourgogne replaced sparkling wines because their quality was not homogenous. Its geographical area, very wide, cover more than 300 municipalities, from the Châtillonnais, to the border of Champagne auboise, included Beaujolais. The AOC imposes harvests and drafting conditions as stringent as Champagne area and modeled on it. The difference is on the maturation period on lees, which is minimum 12 months while it is 15 for the Champagne.

Maturation method: The grapes are specially selected and vinified. They are harvested earlier than still wine in order to preserve acidity which gives this Crémant de Bourgogne his freshness. The excitement comes from the addition of tirage liqueur (wine of the vintage + sugar + yeast) when bottling. This leads to a second fermentation which releases carbon dioxide causing bubbles. The bottles are then placed on the racks in a more or less horizontal position, inclined down wards. A typical regular gesture comes then, manual or mechanical: to turn the bottles regularly head down and nearly vertical so that the light deposit forms itself naturally at the time of the fermentation is brought to the bottleneck. The corking, final stage, comes after the disgorging (removing of the deposit and impurities) and addition of a shipping dosage.

Tasting: a bright-coloured wine with golden hints, a ring of bubbles expressive nose, the Crémant Prestige will transport you to a true adventure of the senses, deep, with notes of white flowers, and fresh fruit.
On the palate, this wine shows itself to be dense, soft and silky. Scents of citrus and hazelnut such as the signing of Chardonnay. A light and fresh final.
