Winemaking method: Beaujolais winemaking with controlled temperatures, 8-12 day vatting period. Harvesting methods: Manual harvesting for all beaujolais A.O.C.. Wine aging: It is aged in stainless steel or epoxy coated cement vats for 7 months, then bottled during the months of April-May. Some prestige vintages are aged in vats for 9 to 12 months.
